The fair also has changed a rule regarding the annual stock show auction, It provides now that only 4H Club or Future Farmers of America members enrolled in a Merced County school may sell a champion through the sale. The junior division classes are open to 4H and FFA members in Merced, Madera and Mariposa Counties.

The following barbecue recipe provides a nourishing main dish for 16 people. Pit Beef Barbecue 12 pounds bottom round rolled roast 4 large garlic buttons, halved cup salt 1 tablespoon black pepper 3 tablespoons barbecue powder 6 or 7 slices onion, ringed 4 or 5 slices bell pepper, ringed 2 stalks celery, cut in half 2 thick slices bacon Cut parchment paper in to 5 foot lengths. Put roast on paper, season, wrap in at least two thicknesses of parchment paper, folding at ends, then tie with laundry cord, firmly but not too taut.
Wrap and tie in about same length of butcher paper. Put this package in burlap sack, fold and tie with wire, forming a loop on one side SO it can be lifted out of pit with hook. Use burlap sacks which have been laundered. Dampen bags and let them drain an hour or so before putting in pit. The first bags to be put in pit right on coals should be kept burning for four or five hours to make a live bed of coals three or four feet deep.
Cover as quickly as possible. Watch closely for four or five hours to be sure no steam escapes. The meat will cook in five to six hours but may be left in pit 12 hours or longer. For an older stain try a little ammonia and water. Rinse well. Read carefully any tags which come with garment or yard goods. Some carry a label saying dye is fast to perspiration. Others give facts which will be helpful when you need to remove stains.
